Prepare the oven itself: placing the wood inside, lighting the fire, and letting it burn slowly until it turns into glowing embers and charcoal. This natural heating process creates the ideal conditions for authentic Greek baking and roasting.

Once the oven is ready, the hands‑on cooking lesson begins. You will learn how to make traditional Greek pies from scratch, starting with kneading and rolling thin phyllo dough. Step by step, you will prepare classic recipes such as spanakopita and tiropita, using fresh ingredients and traditional techniques that have been passed down through generations. After the pies are assembled, they are placed inside the wood‑fired oven for baking.
